{Tips & Hints} Ghoulish Ghostly Cupcake Tutorial



When I was trying to figure out what yummy sweets would be fun and fabulous additions to my Halloween tablescapes, one of the first things that came to mind were the amazing Ghost Cupcakes that my super talented friend Alex, of Enchanted Events & Designs, created for our mommy group Halloween party last year. They were simply beyond adorable! Luckily, for me, she said she would be happy to help me out and make a few for my tablescape, as well as write a how-to so that you can learn how to make them too!! So, here's the tutorial straight from Alex...

Hi everyone, I'm Alex of Enchanted Events & Designs. I was so honored and excited when my wonderful friend Gwynn asked me to make some ghost cupcakes for her Halloween table. I got even more excited when she asked me to do a guest post on her blog to tell all of her wonderful readers how to recreate these yummy treats themselves. The original idea came from Martha Stewart. She has a tutorial on her site, but I modified it a bit to make the assembly a bit easier and of course added pictures.

Ingredients
1) 1 box of cake mix (flavor of choice)
2) Standard and small cupcake tins
3) 1 canister of frosting (flavor of choice)
4) 2 lbs of white fondant
5) Black fondant, or black icing coloring
6) Water and a small brush

Follow the instructions on the box of cake mix for baking cupcakes. Make an equal number of standard and small cupcakes. I use cupcake liners for my standard sized cupcakes so it's easier to handle them once assembled. I recommend baking them at 25 degrees less than the box recommends (so if the box recommends 350 degrees I'll set it to 325 degrees). This will require a longer baking time but the cupcakes will bake up flatter and more evenly.


Next I take one standard sized cupcake and one small cupcake and I cut the tops off of each one.

I then take the icing and spread a thick layer onto the top of each cupcake. I prefer to pipe my icing using a 12 or 2A tip, but spreading it on with a knife or spatula will work just as well.

Next turn the small cupcake upside down and place it on top of the standard size cupcake so that the two layers of icing are touching.

Then spread more icing over the small cupcake so that it's fully covered. Again you can pipe this or spread it with a knife.

You're now ready for the fondant! If you haven't used fondant before it's very easy. It's very similar to play dough in consistency. You can either make your own fondant or buy one premade like Wilton's. Premade is easier but more much expensive and in my opinion not as tasty as a homemade fondant. I prefer to make a homemade marshmallow fondant when I have the time (see below for the recipe).

Roll out your fondant with a rolling pin until you get your desired thickness (about 1/8"-1/4"). Then cut a 6" circle out. I used a 6" round 
cake board to get a perfect circle.

Once you have your circle of fondant, pick it up and drape it over the top of your cupcake tower. You can then arrange the bottom of the fondant into the soft folds of the ghost. If it's not long enough play with the edges a bit to thin out the fondant and create a bit more length.

Next, you will need a small amount of black fondant. If you didn't buy it premade you can make some by adding black icing coloring to the white fondant. I recommend wearing some gloves while kneading the color into the fondant unless you don't mind staining your hands. Start with a little coloring and add more as you knead it until you get the desired color.

Then, break off a tiny bit of the black fondant and roll it into a circle in your hands. Flatten it with a finger so you have a small disc of black fondant. Take your brush and dip it into the water and brush it onto the backside of the fondant disc. Place the disc onto the ghost where you'd like the mouth to be located. Repeat this step two more times for the eyes with slightly less fondant. You can also use chocolate covered sunflower seeds but these you should affix with royal icing and I think it's easier just to make some black fondant instead of a batch of royal icing. Plus with fondant you can get creative and make different shaped mouths and eyes!


Marshmallow Fondant
1 lb white mini marshmallows
2-5 tbsp water
2 lbs powdered sugar
½ cup vegetable shortening

Place marshmallows and 2 tablespoons of water in a microwave safe bowl. Microwave the marshmallows on high for 30 seconds. Stir the mixture and microwave again on high for 30 seconds and stir again. Continue doing this until the mixture has melted, usually about 2½ minutes.

Place ¾ cup of the powdered sugar on top of the melted marshmallow mixture. Now generously grease your hands with the shortening (palms, backs of hand, and in between fingers), then heavily grease the counter you will be using and dump the marshmallow mixture onto it.

Knead the marshmallows as you would bread. Add the rest of the powdered sugar slowly and continue kneading the fondant. Re-grease your hands and counter as needed. If the mixture is tearing easily, it is too dry, so add ½ tablespoon of water at a time until it softens up. It usually takes about 8 minutes to get a firm smooth elastic ball.

Double wrap the fondant in plastic wrap and let it sit overnight.

Prepare the fondant for storing by coating it with a good layer of shortening, wrap in a plastic wrap or Ziploc bag.

{Tips & Hints} Printables


Welcome to all our new followers!!! I can't tell you how happy I am to have you on board. And a big "Happy Monday" to all our continuing followers as well!

Since starting the big Halloween Collection Give Away last week, I have received a lot questions about Printables so I thought that it might be good to do a post to make sure that when you print your free PDF's you get the very best result.

First, when you order Printables from Etsy, or when you receive the free files from me, you will probably receive a multi-page PDF. If you know that you should be able to see multiple pages, but you can't seem to see them, you probably need to download Adobe Reader from adobe.com. (Don't worry, it's free!)

Once you are able to see all the files, you are ready to print! Many people have asked me what they should print on to get the best result. Most Printable designer/sellers will tell you that you can just print on heavy weight bright white card stock. And for patterns which are comprised mostly of whites, pastels and muted colors or Printables where the text does not need to be crisp, simple bright white card stock is fine. But the Printable examples you see depicted in most tablescape and promotional pictures have been printed on Matte Photo Paper. A good heavy weight matte photo paper will give you the truest, deepest, richest colors and the crispest clarity. I have an Epson printer so I typically use Epson photo paper as it is designed for highest compatibility with my printer and so the colors print the closest to what I expect them to look like. Staples also makes a good, reasonably priced, matte photo paper.

For most of the Printables (i.e. Cupcake Toppers, Invitations, Banners, etc.) you want to use the heaviest weight paper you can find. Typically I use the Epson 51 lb. photo paper for these things or the Staples 61 lb. photo paper. But for the Treat Cones, because you need to be able to easily manipulate the paper into a cone shape, it is best to use a lighter weight paper. So for Treat Cones I use the Epson 44 lb. paper, but any lighter weight paper will do.

As far as punching or cutting Cupcake Toppers or Party Circles goes, you can buy 2" and 2.5" circle punches at Michaels or at Joanne Fabrics. I have used the punches made by Fiskars, Uchida and EK Paper Shapers. Although the Fiskar punches work, I have found that they leave a bit of a ragged edge many times and the Uchida and EK punches make a much cleaner cut. If you are cutting larger Party Circles (4" and up), you can use a circle cutter. I recommend the Martha Stewart Circle cutter. It is the easiest to use and gives the cleanest cut. Of course, you can also always go old school and just use a pair of scissors.

{Tips & Hints} How To Make Edible Toadstools


Here's something fun to add to your tablescape if you're throwing a fairy party... edible toadstools!! (Please forgive all the pictures below. They are there simply to help, but I am in no way a food photographer so some might not look as appetizing as they should!)

First you are going to need the following items:

- Red Velvet or Chocolate cake mix (and the items to make it)
- 1 16oz. can of Whipped Cream Cheese Frosting
- Thick and Chewy Soft Top Chocolate Cookies (various sizes)
- Circle Cookie Cutters (various sizes)
- White Candy Melts
- White cupcake decorating confetti or white chocolate chips
- Thick Pretzels Sticks
- Red Fondant (can be purchased pre-made at Michaels)
- Red Decorating Icing
- White Decorating Icing

Start by making Bakerella's basic cake ball recipe. Once you have the cake pop mixture combine. Break off a 2" piece of pretzel stick...
And coat with cake pop mixture and stand upright on a cookie sheet. 

Continue until you have created as many toadstool stems as you will need. Chill. Once these have chilled for a few hours. Take them out of the refrigerator. Melt some candy melts in a bowl in the microwave. (For me, I melt about 3/4 of a cup for about 60 seconds.) Roll the cake pop stems in the melted candy to coat them and then stand them up right on the cookie sheet and chill.
Once these have hardened, remove them from the cookie sheet. Create a small dollop of melted candy in the form of a circle on the cookie sheet for each stem and place each stem in one of the dollops. Chill. (This will help to form a stable base.)

While these are chilling, roll out your fondant. If it begins to stick to your surface just use a little confectioner's sugar. Note: I had never used fondant before I attempted to make these for the first time. So please don't be intimidated. It's ridiculously easy to use! 

Pull out your pre-made cookies. (For these just use your favorite recipe. Just make sure that they are thick kind. Making the cookies various sizes will give your toadstools some visual interest.) 
Next find the right size circle cookie cutter for you cookies. The cutter should be significantly larger than the cookie.
This will make it so that your fondant will easily drape over the edges of your cookie. Cut your fondant.
Then ice the top of your cookie with the decorating icing to help the fondant adhere to the cookie.
Center the fondant on the cookie and shape it down around the edges of the cookie. If you are using white chocolate chips for spots (like I had to after a confetti debacle the night before the party and they were all I could find in the cake decorating section of my local grocery at 10pm at night!) Take your chips and press them upside down into your fondant.
Then remove them...
And add a bit of white decorating icing in the indentations...
Sink the chips (point down) into the icing.

Remove your stems from the refrigerator. Melt a little more candy and slather the top of each stem with the melted candy. While the candy is still soft gently top each stem with a spotted fondant cookie top.

And VOILA! Edible toadstools!!

{Little Surprises} Bargain Hunting

I don't think that I've mentioned before that I'm a bit of a compulsive bargain shopper. Meaning if I see a bargain, whether I "need" it or not, most times I'll buy it. Because, of course, you just never know when you'll need whatever fabulous item it is and by then it will be gone or twice as much or who knows, but it will definitely not be the bargain that it is today! (Or so my slightly slanted logic goes...)

So, last week while I was out poking my nose around town looking for neat items to use for my Halloween tables, I came across a few fabulous, absolutely-couldn't-live-without-but-have-no-idea-when-I-will-use-them-items! (You've been there, right?? Please tell me that I am not alone in this!)

We all know that Home Goods is fantastic, but I do heart TJ Maxx for those occasional super sensational finds. Here's what I found for below (like the plates were $3.99 and $7.99!!) or right around $10...

Adorable, right??! Not sure when I will use them yet, but as I said I simply could not resist!!!

p.s. I got almost all my apothecary jars there too for around $12.99!!
